Low-Fat, Low-Cal Eggnog

A delicious alternative, at only 100 calories per 8 ounce serving, compared to the traditional eggnog's 342 calories per serving!

Cook Time: 0 minutes
Ingredients:
  • 6 cups of skim milk
  • 1 cup of Egg Beaters or egg substitute
  • Sweetener to taste (Stevia, Splenda)
  • 2 teaspoons of vanilla extract
  • 2 teaspoons of rum extract
  • Dash of ground nutmeg and cinnamon
Preparation:
Heat the milk, egg substitute and sweetener in the microwave on high -- or on the stove top -- unti lit is thick, stirring regularly.

Remove from microwave or stovetop, and stir in vanilla, rum and spices. Cover the eggnog tightly with plastic wrap, chill for several hours.

When serving, you can sprinkle the top with spices.

Makes about six 8-ounce servings, 100 calories each. (compared to 342 calories in one 8-ounce serving of regular eggnog.)
